Peach and Blueberry Pound Cake

Yesterday, I baked Donal Skehan’s Peach and Blueberry Pound Cake!

I am moving to a new apartment and this will be the last cake I bake at this flat, so I wanted to bake something special. The reason why I chose this cake was that by chance I found some ripe peaches at a supermarket. It’s always a success when I decide on a recipe after exploring a market and finding some fresh ingredients.

I followed the recipe exactly, though the quantities of butter (255g!) and sugar (340g!) made me flinch…

Also, the quantity of the dough became pretty large after adding the dry ingredients and fruit. I used two 18cm sandwich tins, as I don’t have a 20cm springform baking tin; I had some dough leftover.

 

 

When baking in the oven, they smelled wonderful. The cakes look very pretty, are so moist, and taste great. It was a bit surprising for me that the cake isn’t too sweet or too buttery – the combination really works well. It’s going on my favourites list!
